Snacks are important to every adventure. Yes they give you fuel, but they also give you the perfect excuse to sit down and take it all in! Here you will find some of our favourite snack ideas, either store-bought or home-prepared.

Black Bean Wraps – makes 8 wraps

Ingredients:

  • 1 package large tortillas
  • 2 tins black beans in water, drained and rinsed
  • 2 green peppers, chopped
  • 1 onion, chopped
  • 1 package taco seasoning
  • 1 jar salsa
  • 2 x medium avocados, sliced
  • lettuce, shredded
  • cheese/vegan cheese (if desired)

Fry the green peppers and onions in a little bit of oil (or a bit of water if preferred) until just soft. (about 5 minutes.) Add black beans and fry, stirring often, for an additional 5 minutes before adding the taco seasoning. Add water as needed to make the seasoning saucy, but not too wet. Simmer everything together for an additional 5-10 minutes.

Once cooled, fill each wrap with 1/8 of the black bean mix, 1/4 of an avocado, a tablespoon of salsa, plus lettuce and cheese as desired. Wrap the tortilla tightly and then wrap it in aluminium foil to keep it all together. Store in fridge. We used these for 4 days worth of adventure food, taking them out from the fridge on the morning of each day. I wouldn’t suggest keeping them around much longer than that.
